If you want to hit the high notes, you need practice. Click into "According to Smoky" from www.barbecuen.com and read the "Glossary" for definitions of "smoking." Then you might read "Heat" and "Burning Wood & Blowing Smoke" for more background. Then if you decide that what you want to do is barbecue (faux que in your case with a gas grill) you can add smoke flavor by clicking into the Barbecue Store and checking out the Smoker Box. If you want to try for the flavor immediately, wrap some wood chips in heavy duty aluminum foil, punch a few small holes in it and throw it in the flames of your gas grill. When it begins to produce smoke, put the meat on and close the lid.
