Useful Techniques for Cooking over the Grill or Smoker
Welcome to this edition of proven techniques for outdoor cooking. We present these techniques which will improve taste, ease the work load or even make better presentations to guests and judges - wherever you happen to be enjoying cooking outdoors! Enjoy!
While each technique for accomplishing the best results possible can mostly stand alone, it is best to read them all and incorporate them into an overall assault on the grill. Be sure to have your assault well fortified with your favorite beverage! Today's technique is:
Easy Cleaning

Keeping a grill clean during the many months of outdoor cooking can often proved to be a daunting process. Smoke, grease, heat, coals, charcoal and other items will tend to make the grill quite dirty over time. The following is a great idea to help manage the problems associated with excess grease from fatty foods.
If you're cooking with indirect heat, the coals will be situated on one side of barbecue pit while the meat will be in a different spot on the same pit. Rather than allowing the grease to drip into the bottom of the pit which will require additional cleaning, we suggest placing a pan under the meat in order to catch the excess grease from the meat.
There are at least two different ways for catching grease while cooking chicken, pork and other fatty meats. The first, and easiest, would be to use disposable aluminum foil pans to catch the grease. When finished cooking these pans may be discarded, or even recycled. The other method would be to use a more permanent baking pan or cookie pan from your pantry. NOTE: Smoke has a tendency to blacken just about anything it comes in contact with including these pans. In order to reduce the amount of time and elbow grease, we suggest lining the pans with aluminum foil to make cleanup a simple breeze. Have fun!
