So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.
In North Carolina, they serve a BBQ Pork sandwich with a sauce called "Zing Sauce". Here is a facsimile of that sauce from NC!
Mix the following ingredients and pour over your hot pork sandwich for some real zing!
1C. apple cider vinegar
1/2 C. water
1 t. salt
1 t. crushed red pepper
1/2 t. black pepper
Enjoy!
If you want a similar taste for a finishing sauce, you might want to try the following:
Combine the following ingredients and let simmer for 10-15 minutes, bottle and let cool for a few hours.
3 C. apple cider vinegar
2/3 C. brown sugar
1/2 c.catsup
2 T. Tabasco sauce
1 T. Worcestershire sauce
1 t. onion powder
1 t. salt
1 t. black pepper
