You'll absolutely love this universal dry rub for pork. Simply take your favorite type of pork and sprinkle "or rub" with the mixture below. Baste occasionally (every 30 minutes or so) with a beer based pork mop.
You will probably want to begin with a medium sized Boston Butt (Pork Roast).
1 1/2 Tbs fresh ground black pepper
1 1/2 Tbs lemon pepper
1 Tbs cayenne pepper
(adjust accordingly)
1 Tbs dried basil
1 Tbs garlic powder
1 tsp dried parsley
1 Tbs onion powder
2 tsp paprika
1/2 tsp salt
yellow mustard
Allow the meat to come to room temperature before applying a thin coat of the mustard (optional). Thoroughly combine the dry ingredients and sprinkle "like salt" or just a little heavier. Cook until the center of the pork reaches 185°. Have fun!
