Chicken is one of the all-time favorite meals coming off the grill in millions of backyards every weekend. It's only with due respect that we honor the lowly chicken. It has nurtured us and fed our children. Thank you, chicken! This recipe uses fruit to flavor the chicken.
You can use different types of fruit to suit your pallets. This is one we like.
10-12 chicken thighs(you can use any piece)
1 cup orange juice
1 small onion, diced
1/4 cup lime juice
2 Tbs fresh ground pepper
2 Tbs butter
1 Tbs brown sugar
1 Tbs dry mustard
1/4 tsp salt
1 tbs Worcestershire sauce
Combine all ingredients (except the chicken) in a saucepan and simmer for 15 minutes until flavors begin to combine thoroughly. Let cool. In a small glass dish or sturdy plastic bag, add marinade and chicken together for several hours in the refrigerator before cooking.
Remove the chicken and allow to reach room temperature. While the chicken is warming, reheat the marinade until it begins to boil gently. Remove and allow to cool. Cook over medium heat until done. 160° in the thickest part is sufficient and will not cause the chicken to be dry. You can baste with the marinade you just boiled and allowed to cool.
