Did you know that soy sauce was discovered in China over 2500 years ago? It took a thousand years to migrate to Japan where it was later refined on its way to becoming what we recognize as modern soy sauce. Teriyaki is a term for a Japanese dish that has been marinated in a mixture of soy sauce, sugar, ginger and seasonings before being grilled. Hai! (Yes! in Japanese-Japan)
Combine the following ingredients:
1 cup pineapple juice
1/2 cup brown sugar
1/2 cup soy sauce
4 Tbs red wine vinegar
2 Tbs dry sherry
2 cloves garlic - minced
1 Tbs fresh ginger - chopped
Mix all ingredients together and simmer for 10 minutes. Allow to cool. Marinate meat for 2 to 8 hours in refrigerator before cooking.
