Lamb is probably the least understood meat when outdoor cooks get together. I guess this is fine as it leaves more for us. But really, it is always tender, moist and flavorful when cooked properly. Most lamb is cooked with a mint based rub. This is a little different which you will enjoy!
In a medium glass or stainless steel mixing bowl, thoroughly mix/combine the brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. When that is done, then gently apply to the lamb chops and place them on a plate. Cover, and refrigerate for 1 hour.
While this is going on, go ahead and preheat your grill for medium high heat.
Brush grill grate lightly with oil, and arrange lamb chops on grill. Cook 3 to 5 minutes on each side, or to desired doneness. For lamb, desired doneness should be medium rare...hot 'n red in the center. Don't over cooke these as you will certainly loose a lot of flavor!
