Super Savory Salmon

Salmon is King!We got to thinking about how fantastic salmon tastes when done to perfection and all the ways there are to serve this marvelous fish.  This came about when teaching my future son-in-law the fine art of hot smoking salmon on an electric smoker.

Here is a super savory grilled salmon recipe that is sure to delight everyone, including the landlubbers.  Let's start by collecting the following ingredients:

    1 lb fillets salmon
    1/4 cup peanut oil
    2 Tbs soy sauce
    2 Tbs balsamic vinegar
    2 Tbs thinly sliced green onion
    1 1/2 tsp brown sugar
    1 clove garlic, minced
    3/4 tsp ground ginger
    1/2 tsp crushed red pepper flakes
    1/2 tsp sesame oil
    1/4 tsp cinnamon
    1/8 tsp salt

  1. In a non-reactive bowl, whisk together the peanut oil, soy sauce, balsamic vinegar, green onions, garlic, brown sugar, ginger, red chile flakes, sesame oil, and salt. Next, place fish in a glass dish and marinade on both sides. Cover the bowl with plastic wrap, and refrigerate for 4 to 6 hours.
  2. At your convenience, preheat barbecue or gas grill.
  3. If you have a grill topper, it helps to keep the fish intact.  Oil the grill rack or grill topper.  Ideally, the fish should be about 5 inches from coals. Place the salmon on grill and discard the marinade. Grill the salmon about 10 minutes per inch of thickness, which is measured at thickest part.  Check periodically as the fish is done when it flakes when tested with a fork.  Don't overcook salmon!
