Sometime around 1965, Tyson "invented if you will" the Rock Cornish game hen when he cross-breed White Rock hens and Cornish hens. Two-thirds of Cornish game hens sold in the United States today come from Tyson Foods, Inc.
First, collect the following ingredients:
3 Cornish game hens
4 whole cloves garlic, minced
2 large shallots, peeled and quartered
2 Tbs freshly ground black pepper
1 tsp kosher salt
1 1/2 Tbs coarse-grained mustard
1 1/2 Tbs Dijon mustard
2 tsp rosemary
1 tsp sweet paprika
1 tsp fennel seed, crushed
3/4 tsp red pepper flakes
Discard the neck, giblets from the hens, rinse and pat dry the hen. Remove the backbone with either a sharp knife or kitchen shears spreading the hen flat with the breast side up. Combine all the ingredients and marinate for up to 4 hours refrigerated. Baste while cooking using the remaining marinade. Do not baste during the last 10-12 minutes. Grill over medium heat until done - approximately 165°. Allow to cool about 10 minuted and serve. Enjoy!
