Comments:
The ripe mango is variably colored yellow, orange and red, reddest on the side facing the sun and yellow where shaded. The green usually indicates that the fruit is not yet ripe, but when ripe, the unpeeled fruit gives off a distinctive resinous slightly sweet smell.
First, collect the following ingredients:
1/4 cup Mango puree
1/4 cup cilantro - fresh chopped
2 jalapeno chile peppers - seeded and chopped
2 tsp olive oil - extra virgin
2 tsp seasoned salt
1/2 tsp garlic powder
1/2 tsp cumin - ground
4 chicken breasts - boneless, skinless
Combine all of the ingredients (not the chicken) thoroughly. Coat the chicken with the sauce and let the meat absorb the flavors for about 30 minutes while the fire builds. Grill until the desired doneness has been reached. SIDE NOTE: We like to initially grill chicken over direct heat to get the great grill marks and then move to the other side of the grill so the meat can be basted and finish cooking while absorbing the smoke flavor.
