When thinking about flavors from the Southwest, the first things to come to mind are: salsas, hot sauces, Fajitas, tortillas, chile peppers, and the list continues. Did Tuna ever come up? You may add a southwest accent to just about anything and tuna ranks right up there with the best of them.
Start by locating the following ingredients:
2 Tuna steaks 3/4 inch thick
1/1 cup white wine
1/4 cup cilantro, chopped fine
1 Tbs olive oil
1 Tbs dry mustard
1 Tbs black pepper
1/4 tsp salt
Mix all ingredients [less the tuna steaks] thoroughly in a plastic, stainless steel or glass bowl. Add the tuna and coat generously. Marinate in refrigerator for 30 minutes, turning after 15 minutes. Heat the grill to medium high and cook to the desired doneness. Medium to medium well go great with steaks, but some like them flaking and others mostly raw. It is a matter of your preference.
