Southwestern Style Lamb
Lamb is the little known "other" white meat. It is great as both a meal and as an appetizer. You really should try it! Enjoy!
First, collect the following ingredients:
1 rack lamb chops -- 8 ribs
3 tablespoons stone ground mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon crushed red pepper
2 cloves garlic -- minced
salt to taste
First, trim as much of the visible fat from rack as you can and set aside. Combine the remaining ingredients in small bowl and mix thoroughly. Slather [or spread] on the outside of the lamb chops and marinate in refrigerator up to 4 hours.) Prepare grill for medium-hot grilling. Place lamb on grid and grill 6-8" over hot coals until thermometer registers 140° for rare or 150° for medium-rare ; turning frequently. Serving suggestion: slice other vegetables, brush with the same mixture of oil and grill over hot coals until tender.
