Southwestern Grilled Tomatoes
You may be overlooking tomatoes when it comes time for grilling. The tomato has naturally occurring sugars which caramelizes during cooking. Don't overlook this great treat!
First, collect the following ingredients:
6 plum tomatoes (about 1 1/4 pounds), cut in half lengthwise
2 tablespoons extra-virgin olive oil
Fresh cracked black pepper
3 cloves garlic, minced
1 Tbs finely chopped fresh basil
Whole fresh basil leaves for garnish
Brush each of the tomato halves [top and bottoms] with the olive oil. Next season [top and bottoms] generously with salt and pepper, and sprinkle the garlic and chopped basil [cut side of the tomato only] over them.
Cook the tomatoes, until nicely browned.
