Southwest Bird Burgers
Comments:
Lots of folks want to eat leaner and lighter. So naturally chicken, and less often turkey, comes to mind. How many ways CAN you fix chicken? Well, here is one that will warm your insides with the warm flavors of Santa Fe.
Ingredients:
2 pounds ground chicken or turkey
1 cup shredded cheddar cheese
3 Tbs chopped fresh cilantro
3 Tbs seasoned dry bread crumbs
4 ripe beefsteak tomatoes, halved
1 ripe avocado, pitted and coarsely chopped
2 Tbs minced yellow onion
2 Tbs fresh lime juice
1 tsp garlic powder
Salt and freshly ground black pepper
4 hamburger buns
First, let's make the guacamole. In a small bowl, combine the avocado, onion, lime juice, and garlic powder. Mix well with a fork, slightly smashing the avocado into small pieces. Season to taste with salt and pepper.
In a large bowl, combine the chicken, cilantro, bread crumbs, 1 tsp of salt, and 1/2 tsp pepper. Mix thoroughly and form 4 patties, each about 1 inch thick. Place chicken burgers on the grill and arrange the tomato halves, flesh side down, alongside. Cook for 3 minutes per side, or until the burgers are cooked through and the tomatoes are charred.
Transfer the tomatoes to a cutting board and chop all of the charred tomatoes into small pieces. Top the burgers with the cheddar cheese, cover with foil, and cook for about 1 minute, or until the cheese melts.
Serve 4 burgers on the hamburger buns with half of the charred tomatoes and all of the guacamole.
