Simply The Best Mopping Sauce
A "moping sauce" is used to baste the meat during the cooking process. It helps keep the meat from drying out and it adds flavors. The secret is to get one that does not contain sugars or tomatoes because they will have a tendency to burn. This one fits the requirements and is really great!
First, collect the following ingredients:
2 cups vinegar
1 cup olive oil
2/3 cup Worcestershire sauce
1/2 cup water
2 lemons, pulped and cut in half
2 tablespoons hot sauce
6 bay leaves
1 teaspoon fresh ground black pepper
3 cloves garlic, minced
1 tablespoon paprika
1 tablespoon chili powder
In a stainless steel pot, combine all ingredients and bring to a gentle boil. Remove from heat and allow to cool slightly. Keep warm and "mop" the meat every 1/2 hour.
