So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.
Salmon is one of the finest fish in the world for great tasts. Whether raw as in the form of sushi or grilled on a cedar plank over a red hot grill, salmon is always tasty and delicious. We take this to a new level ... Garlic roasted salmon made into a dip for entertaining. This is an outstanding success!
First begin with one pound of Garlic Roasted Salmon. Allow to cool, then cover and place in the refrigerator. Next, in a medium sized non-reactive bowl mix thoroughly the following fresh ingredients:
1/3 cup sour cream
1/3 cup mayonaise
1 Tbs lemon juice
1 Tbs parsely
4 green onions (scallions) not the dark greens
1 tsp salt
1 tsp fresh ground black pepper
Once blended, add the cooled salmon and mix minimally, but sufficient to thoroughly blend the ingredients. It is a nice presentation if they can see the slivers of salmon on the cracker or potato chip. Place in the refrigerator covered until party time. This will gererate rave reviews for the cook and delight the guests. Enjoy!
