With America on a steady diet of poultry, we can't have too many recipes for our foul friends. So, in keeping with a more trim nation, we present the lonely chicken. REMEMBER: When finished preparing raw chicken, always wash your hands, the counter tops, any cutting boards, knives and other utensils with HOT soapy water before they come in contact with other raw or cooked foods.
Place your hands on the following ingredients:
2 whole chickens - roughly 3 lbs each
4 Tbs olive oil
2 Tbs chopped rosemary
4 cloves of garlic - minced
2 tsp fresh ground black pepper
1 tsp basil
1 tsp salt
1 tsp lemon juice
Combine all ingredients and place 1/2 mixture in each of two (2) sturdy plastic bags, add 1 chicken to each bag and allow to marinate for several hours (turning each 30 minutes) in the refrigerator before cooking.
Remove the chicken and allow to reach room temperature. Roast (350°) chicken in indirect heat until done. Baste with basting sauce consisting of 1/2 butter and 1/2 apple juice if desired.
