Potatoes are great off the grill. Lightly smoked and roasted make not only a great presentation on the plate but a wonderful side to any great meal!
First, collect the following ingredients:
2 pounds red potatoes, washed and cut in half
1/4 cup extra virgin olive oil
1 tablespoon minced garlic
6 scallions, sliced 1/8-inch
1 Tbs freshly ground black pepper
1 tsp salt
Bring grill up to "hot" with the fire on one side. Place the potatoes on the other "non-heat" side and close the lid until done - about 400°. Easy?..You bet! Enjoy!
