Bring your pit's temperature up to about 350 degrees. You will need the following ingredients:
Desired number of full garlic bulbs -
some, but not all skin removed
Virgin olive oil
Dried basil
Dried thyme
Fresh crushed black pepper
Salt to taste
Remove the top 1/4 inch of the garlic bulb (enough to expose the top of each of the individual cloves of garlic. With a small spoon or dipper coat the top of the garlic (where you removed the tops) with the olive oil. Sprinkle medium amounts of the basil, thyme and pepper so as to coat the top of the garlic. (You should not be able to see the "white" of the garlic)
Place each of the the garlic bulbs in a garlic roaster if you have one (or alternatively on a baking sheet) and bake for about 45 to 50 minutes or until cloves are soft.
Spread a whole clove or two on small slices of french bread. They are best when served warm with a sprinkle of salt. Enjoy!
