So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.

Comments:
We have campers come by the site all the time and felt this recipe would be great for the w-i-d-e outdoors as well as in the kitchen. Life is short and it is time to live a little with this "Wake-Me-Up" morning meal!

In a nutshell:
You fry up a few slices of GOOD cured ham in bacon fat. After it is fully browned and removed, pour enough water in the pan to boil up all the bits and particles. Add pepper and simmer until almost gone. Then add 1/4 C. coffee. Simmer until it reaches the thickness and color that you want.
Serve over hot grits with biscuits.
Have fun,
Smoky
