Pork Roast

For all the rotisserie folks out there, be reminded that the pork roast cooks just as nicely sitting still in the indirect heat as it does with the rotisserie churning loudly! So sit back relax and enjoy the birds and a fresh drink!

Directions: Before placing the roast on the grill, you should trim all of the external fat from the roast and then rub it down with mixture of the following:
1 Tbs of salt
1 tsp powdered garlic
1 tsp powdered onion powder
1 tsp thyme - dried
1 tsp ground bay - dried
1 tsp rubbed sage - dried
1 tsp black pepper - fresh ground
Let the roast sit in the refrigerator for 1 to 3 hours. Then place it on the side of the grill away from the heat - preheated to about 300 degrees - for an hour. Check the internal temperature of the meat with a thermometer and then remove it when the roast reaches a doneness of 155 degrees.
