Memphis Dry Rub For Ribs

Love Ribs? And who doesn't? Here's a nice dry rub mixture directly from the heart of barbecue land, Memphis, Tennessee. Almost no other place in the world consistently turns out fabulous ribs that Memphis. This is an easy recipe and is good for about 2 racks of spare ribs.
2 racks of spare ribs or 3 racks of baby back ribs
Thoroughly combine all the above ingredients. Techniques for applying the rib rub prior to taking to the barbecue pit: Remove the membrane on the inside curved part of the rib. This allows the seasoning to penetrate that side of the meat also. Using a pastry brush, apply a thin coat of yellow mustard to all sides of the ribs. This helps the seasoning to stick to the meat, offers a conduit to deliver the seasoning into the meat while cooking and helps set up a tender, flavorful "crust" on the outside of the ribs. The mustard flavor dissipates totally leaving no trace of any mustard flavor.
