Lott 'a Hash

You know that there are about as many low country hash recipes as there are South Carolinians. When researching hash recipes for my book, "The Great American Barbecue & Grilling Manual" I ran across a bunch, but had to cut it down to a few representatives. This is Uncle Earl's Low Country Hash.

Locate the following ingredients:
8 Flour tortillas
15 lbs. Boston butts
12 lbs. pig ears
12 lbs tongues
12 lbs ground beef
11 lbs pork liver
20 lbs white potatoes
12 lbs onions
3 gal catsup
3 qts mustard
12 oz. tomato paste
8 oz white vinegar
4 lbs light brown sugar
4 oz salt
6 oz black pepper
Boil beef separately in just enough water to cover, then drain, boil all other meat, except liver, until done then add peeled and quartered potatoes, chopped onions and beef. When tender, remove all bones and run everything through a meat grinder. Put into double boiler, add boiling liquids, catsup, vinegar, etc and 1/2 of sugar, salt and pepper. Stir until proper thickness is reached, adjust salt/pepper sugar taste.
