It's always fun to mix things up a bit just for fun. This recipe is just one of those moments. The vinegar, garlic and mustard are the items which will take you to Italy on this recipe. You may just find these are excellent and have to make them again and again!
In a medium size sauce pan, combine the following ingredients: balsamic vinegar, ketchup, brown sugar, garlic, Worcestershire sauce, Dijon mustard, salt, and black pepper over medium-low heat; simmer for 20 minutes. Remove and allow to cool for 5 minutes.
Preheat your outdoor grill for medium heat and lightly oil the grate.
Take your pork chops and season all sides with salt and black pepper to taste. Brush the chops with the sauce from the saucepan.
Cook the chops until the pork is no longer pink in the center, which should be about 5 minutes per side. Your instant-read thermometer inserted into the center should read 155°. Remove from the grill and allow to rest for 3 minutes before serving with the remaining sauce on the side.
