Unlike salmon, trout is a delecate fish that needs your tender care. These fresh water fish, with a little help offer your guests some of the finest eating this side of the stream!
Begin with 6 medium dressed freshwater trout.
The Marinade:
6 medium dressed freshwater trout
Salt - to taste
1/3rd cup dry sherry
1/3rd cup butter - melted
2 Tbs. fresh lemon juice
2 Tbs. fresh ground black pepper
Sauce:
1/2 cup butter melted
1/4 cup white wine
2 Tbs. brown sugar
1 Tbs. garlic - grated
1 tsp salt
1 TBS fresh cracked black pepper
Sprinkle trout cavity with salt and pepper. Combine the balance of the marinade and pour over trout and allow to sit in refrigerator for 1 hour - turning once.
Fire up the grill and begin making the sauce by combining the sauce ingredients in a saucepan for 10 minutes over low heat.
Grill over medium heat (350 deg.) for 10 to 15 minutes. Baste with sauce as you turn the trout occasionally. Be gentle with the meat as it is quite tender! Remove and serve at once. You will find this to be a superb meal.
