Kickin' Grilled Oysters

Grilled Oysters is not what one would normally find on most outdoor grills, but for those folks who truly enjoy seafood and like a different twist to the mundane, then this is a must try recipe.  If you don't live by the sea, then obtaining these little "pearls" might pose the biggest problem with this recipe.  However, for the rest of us, you really owe it to yourself to try these and relish in the flavor!  Enjoy!

24 shucked and washed oysters*
2 Tbs finely grated Parmigiano cheese
2 Tbs fresh minced parsley leaves
1 Tbs lemon juice
2 tsp minced garlic
1/2 tsp hot sauce
1/2 tsp salt
1/4 tsp cayenne pepper
10 Tbs softened unsalted butter

* Keep one-half of each shell - washed - it will be the "cooking dish"

This recipe is SO easy!  With the exception of the oysters, combine all the above ingredients in a glass or non-reactive mixing bowl.  Mix them thoroughly so as to meld the flavors into a super buttery flavoring mix.

Next, take your buttery flavor mix and then on piece of plastic wrap.  Now, flatten this to make a "buttery-pancake". Chill this for easy slicing.

Now go get your grill warmed up and ready to go.

If you have a Stainless Steel Seafood Rack, then you are all set for action. Otherwise grab a cookie/baking sheet and place 1 oyster in each shell. Remove your "buttery-pancake and slice into 24 fairly equal portions. Place one portion of the butter on each oyster. Place the oysters on your hot grill and cook until the oysters are done, and the butter is melted and bubbling.  This should be about 4 to 6 minutes.

OK, now serve to your friends hot and spicy!
