Jamaican Jerk Rub

And no, we're not talking about your neighbor down the street. "Jerk" is a spicy seasoning which originated from "the islands" and has grown quite popular these days.

First, collect the following ingredients:

    3 Tbs onion powder
    3 Tbs onion flakes - dried
    1 Tbs black pepper - freshly ground
    1 Tbs cayenne pepper
    1 Tbs ground allspice
    1 Tbs sugar - white
    2 Tsp thyme - dried
    2 tsp cinnamon - ground
    1 tsp salt
    1 tsp ground nutmeg

Combine all the ingredients in a non-reactive bowl and mix thoroughly. Start using the rub on burgers, chicken parts and any other meat you enjoy. Start sparingly and then increase to where your tolerance to heat meats your flavor preferences. Enjoy!
