Many parts of the U.S. celebrate good luck in the coming new year by consuming black-eyed peas often accompanied by hog jowls or ham or Hoppin' John. Pork is considered lucky because it symbolizes prosperity. Cabbage is also considered "good luck" and is consumed on New Year's Day by many celebrants. Cabbage leaves (representing money) are also considered a sign of prosperity. Enjoy!
Collect the following ingredients:
4 bacon strips, or your selection of pork
2 cup fresh blackeyed peas
2 cup water
1/2 cup uncooked white rice
1/4 cup onion, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 tsp Louisiana hot sauce
2 tsp fresh ground pepper
1 tsp salt
Dice the bacon strips and brown in dutch oven with the onion and peppers until bacon is crisp and vegetables soft. Next add the peas, rice and water. Cover and simmer, until the rice is tender. Salt & pepper to taste. Add hot sauce to taste.
