So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.
Spices complimenting chicken can get confusing because of so many herbs and spices available. Some of the more common spices for poultry consist of lemon pepper, oregano, sage and tarragon. Mix and Match! Enjoy.
Try this one on Chicken:
1 cup sugar
1/2 cup onion salt
1/2 cup garlic salt
1/2 cup paprika
2 Tbs fresh ground black pepper
1 Tbs chili powder
1 Tbs lemon pepper
1 Tbs rubbed sage
1 Tbs dried basil
1 tsp ground dried rosemary
To use, mix ingredients thoroughly and then sprinkle it on chicken and allow to sit for 30 minutes. Place chicken on the barbecue pit away from the direct heat. Cook normally until chicken reaches 165 degrees internal temperature. Enjoy!
