Herb Roasted Lamb Chops

Lamb chops are to die for in rich flavor. Many will not try lamb and we support that since it leaves more for the rest of us. You really should try one before you make up your mind. They are absolutely delightful if not overcooked.
4 lamb chops
2 Tbs dried rosemary, crushed
1 Tbs olive oil
1 Tbs peanut oil
1 Tbs dried sage
1 tsp dried basil
1/2 tsp salt
1/4 tsp freshly ground black pepper
2 large cloves garlic, crushed
Mix all of the dry ingredients and garlic with oils to form a paste. Should it be a little thick for you, simply add a little more olive oil. Next, rub the paste thoroughly on all sides of lamb chops. If you have time, cover the chops and allow to soak up the flavors in refrigerator at least one and up to 3 hours.
Grill chops until rare/medium rare. DO NOT OVER COOK! The seasoning should become slightly charred. If you are really not into lamb, try this recipe on veal chops.
