So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.

Herb Grilled Shrimp

Comments:

Shrimp are the golden nuggets of the sea, of course so are oysters, clams and many other wonderful forms of sea life. We are fortunate to live near the coast where fresh shrimp are available all the time but no matter your location, you can enjoy this great tasting delicacy.

This recipe will handle any number of shrimp up to about 50 or so shrimp depending upon the size. Shell the shrimp, rinse and dry. Then place to the site. In a medium size mixing bowl combine the following:

1/4 cup virgin olive oil (others will
       also work)
1/4th cup spicy Italian Dressing (I use Kraft)
    4 garlic cloves - grated
    1 Tbs dry basil
    1 Tbs dry thyme
    1 tsp. fresh ground pepper
Dash of hot sauce to taste
    Salt to taste

After thoroughly mixing the above ingredients, start the grill and allow it to become hot. Then add the shrimp to the marinade and mix thoroughly. Allow this to sit for about 15 minutes to allow the flavors to mingle. Cook the shrimp until firm, but no more than that. Shrimp cook quickly and can become tough. If you like to experiment, cook only one and then taste it. Adjust/Add to the ingredients for the rest of the shrimp and try another. Keep notes on your changes so that you can duplicate it next time! Enjoy!
