This recipe may be done with whole or pieces of chicken or game hens. The herbs, garlic, Dijon mustard, lemon juice, etc will make the meat melt in your mouth for an exquisit taste not found in any restaurant. This stuff is GREAT! Enjoy!
Herbs simply bring out the best in a meal, particularly poultry. You'll need the following:
1 3-4 lb hen or 4 game hens
1/2 tsp rosemary
1/2 tsp basil
1/2 tsp parsley
1/2 tsp oregano
1/2 tsp chives
3 cloves of garlic - minced
1 tsp salt
2 tsp fresh ground black pepper
1/4 cup Dijon mustard
1/4 cup Dijon mustard
1/4 cup olive oil
1/4 cup lemon juice
Clean and pat dry the poultry. Combine all ingredients in a bowl. Place bird(s) in bowl and coat thoroughly insuring some of the mixture is placed under the skin for additional rich flavors.
Allow to marinate while the grill heats to 350°. Cook in indirect heat until the thickest part reaches 160° using a meat thermometer.
Remove from grill and allow to "rest" 10 minutest before serving.
