Pork Ribs

Aloha and komo mai (come on in)! Welcome to the hui (organization) of barbecue'n fools. The kahuna (sorcerer) of barbecue has great knowledge for fantastic Hawaiian spare or baby back ribs. Let's create some pork ribs no ka 'oi (the best)!
Collect the following Ingredients:
3 pounds of baby back or spare ribs
1/2 cup soy sauce
1/3rd cup brown sugar
1/3rd cup scallions including tops
2 cloves of garlic - minced
2 Tbs fresh ground black pepper
Mix thoroughly all ingredients (not the ribs) in a plastic or glass bowl large enough to accomodate the slab of ribs - cut them in half if necessary. Marinate ribs in the container for 4 hours before placing on the pit in indirect heat (away from the heat underneath). Cook ribs until tender at 225 degrees. For baby back ribs that will be about 3 1/2 to 4 hours and for spare ribs it will be 5 1/2 to 6 1/2 hours. For a nice touch, grill several pineapple slices over direct heat and serve on top of the ribs when placed on the table!
