Grilled Shrimp Scampi

If you are a seafood buff, then you will certainly enjoy this recipe. Always use fresh shrimp, seasonings and spices when available as it make everything taste so much better.
1 1/2 pound jumbo shrimp, shelled and de-veined
Kosher salt and freshly ground black pepper
1/4 cup fresh olive oil
3 teaspoons minced garlic
1/4 cup dry white vermouth
1 tablespoon freshly squeezed lemon juice
2 teaspoons finely chopped flat-leaf parsley leaves
1/4 teaspoon grated lemon zest
Several hours before you would like to eat, take the time to prepare and season your shrimp so the flavor will permeate the meat and produce wonderful flavors at the kitchen table or backyard patio.
The first thing you will want to do is combine all the above ingredients, not the shrimp, in a plastic zip lock type bag. Mix thoroughly and set aside.
Now, you should rinse, de-vein and pat the shrimp dry. Once finished, add the shrimp to the zip lock bag with the other spices. Remove much of the air and "massage" the shrimp to get them evenly coated with your seasonings. Place in the refrigerator until ready to cook, up to 6 hours.
Finally,.... it is time to fire up your grill to medium heat. You really don't need a hot grill as shrimp will cook quickly.
Cook a minute or so on each side until slightly firm.
Place the shrimp on a platter and serve. You really should consider doubling this recipe as it is so good!
