Desserts on the grill are WAY OVERLOOKED. They are both unique and fun to present. Pineapple is one of the better ones to serve.
First, collect the following ingredients:
1 fresh pineapple
Granulated sugar or brown sugar
Finely grated zest from 1 lime
Fresh ground black pepper
1/2 cup orange marmalade
For this recipe, first make sure the grill has been heated to medium. Grate the zest and peel the pineapple and slice it into 1/2 inch thick slices removing the center core. Sprinkle the pineapple on both sides lightly with the sugar, some zest and a shade of fresh ground black pepper. Once the grill is ready, place the slices on the grill and cook for about a minute or two. Flip them over and brush the cooked side with some of the marmalade and sprinkle on any remaining zest. Cook slowly until tender, about another minute or two.
Serving suggestion: Serve with vanilla ice cream.
