Grilled Chicken Wings with
Spicy Chipotle Hot Sauce

Grilled wings are a favorite just about anytime. If you plan properly, then you can cook them early and have them to "snack on" while the rest of the meal is cooking.  These are good!

    40 or 50 chicken wings - enough for friends
    Olive oil
    1 1/2 Tbs Paprika
    Salt and freshly ground pepper

Heat your gas or charcoal grill to medium/high. You are going to want to roast the "suckers", not burn them to crisp.  Simply combine the wings with a few tablespoons of olive oil and season with salt, pepper and enough paprika to present a pleasant reddish color,about 1 1/2 Tablespoons. Once sufficiently seasoned, then lace on the grill and grill until golden brown on both sides.  They should be cooked throughly, say about 4 to 5 minutes per side.

Chipotle Hot Sauce:

    1 1/2 cups red wine vinegar
    3 tablespoons Dijon mustard
    2 to tablespoons chipotle peppers - pureed
    3 tablespoons honey
    3 tablespoons olive oil
    1 clove garlic - minced
    Salt and freshly ground pepper
    1 stick unsalted butter, cut into pieces
    2 tablespoons ancho chile powder

You should probably do this before the wings are cooking, thoroughly stir together the vinegar, Dijon mustard, chipotle puree, honey, and oil in a medium bowl. Next, season with salt and pepper, to taste.

In a large skillet, melt the butter. Add the above hot sauce mixture and gently bring to a boil. Add the ancho chile powder and then season with salt to taste.
