Grilled Asparagus
Comments:
We have many health concious folks out there screaming for veggies. OK, OK, here you go folks! Let's try something different and tasty. Grilled Asparagus is easy to do and offers guests a great side dish with very little trouble.
Directions: Let's begin with about 1 1/2 to 2 lbs of fresh asparagus. You know, they are in 'bunches' in the vegetable section of your grocery store. The larger ones are better for grilling. After washing them, gently peal the the outter skin. If you should have the smaller ones, simply move to the next step.
'Toss' the asparagus with extra virgin olive oil (because it is better for you than corn oil) and then sprinkle them with either fresh or dried (use 1/3 less dried than fresh) herbs such as basil, thyme and or marjoram. They should be grilled 'lightely' so as to make them warm and a little browned. Don't over cook them as you will dry them out. Cooking time will be about 10 minutes. The above quantitles will serve 4 to 6 guests depending upon appatites! So, for this dish, you will need to have the following on hand:
extra virgin olive oil
basil (dried or fresh)
thyme (dried or fresh)
marjoram (dried or fresh)
Note: If you are useing the dried herbs, allow time for the oil to make the herbs soft and moist. Remember use only 1/3 the amount of dried herbs than you would for the fresh stuff.
