Goat Cheese Stuffed Grilled Chicken Breasts

Since most folks enjoy chicken cooked almost any way possible, here is a great recipe which will delight all at the table. Goat cheese has been made for thousands of years and is probably one of the earliest made dairy products. Goat cheese softens when exposed to heat and adds rich flavors to the meal.
4 large boneless chicken breast, pounded thin
Preheat your grill to medium heat. While that is working, mix the goat cheese, olives, red pepper and thyme in a small bowl and season with salt and pepper to taste. Lay each thinned breast out and fill with your cheese mixture. Folk the chicken breasts and brush the outside of the breasts with the olive oil and season with salt and pepper to taste. Secure together with toothpicks. Grill for 8 to 10 minutes or until golden brown and cooked through.
