This recipe can be used on beef, venison, goat or other game meats. First, collect the following ingredients:
1 cup vinegar
1 cup water
2 medium, sliced onions
1 juice from lemon
2 bay leaves
2 cloves of garlic, crushed
1/2 tsp tarragon
1 tsp salt
1 tsp black pepper
Combine all the ingredients and mix thoroughly. Bring to a boil, reduce heat and simmer 5-10 minutes. Cool. Cover meat and refrigerate for 2 hours to 2 days. Do not use aluminum or iron containers to cook or store. Use dry wines and vinegars the color of the meat: red for red meat and white for white meat. Try substituting cranberry juice for vinegar.
