Go ahead and preheat your grill for direct cooking. Next collect the following ingredients from the frig or pantry:
4 - 1 1/2 pound fresh trout - cleaned and scaled
1/2 cup olive oil - light
1/4 cup white wine
2 Tbs freshly ground black pepper
1 tsp salt
1/2 tsp onion powder
1/2 tsp. Worcestershire sauce
Trout are often grilled in fish grilling baskets that make it easy to turn over. Regardless of whether you use a basket or simply turn it when needed, this recipe will give you a delightful and delicate meal. Combine the above ingredients [less the trout, of course] in a saucepan and simmer for about 10 minutes. Allow to cool.
Marinate the trout for about 30 minutes before grilling. When the fire is medium hot, simple place the trout on the grill and baste as it cooks keeping the fish moist and tender. When the trout flakes easily, it is ready. Serve immediately. Do not baste for the last 3-4 minutes of cooking time.
