Got the hankering for a nice thick pork chop but want something really different? This is a delight to prepare and even better on the end of a fork! Enjoy!
Start with the freshest pork chops from your butcher or grocery store. Pork should always be light pink and fresh looking.
4 thick-cut pork chops
1/4th Cup dark rum
3 Tbs fresh ground black pepper
2 Tbs sugar, dark brown
1 Tbs lime juice
1/2 tsp salt
1/2 tsp ground cinnamon
Combine all the ingredients except the black pepper. Marinate for 2 hours turning occasionally. When ready to grill, sprinkle pepper directly onto the chops and grill over medium to high heat until done. Not crazy about too much pepper? Mix it in with the other ingredients and marinate all together. Grill as above.
