They're Ready - Come And Get 'Em Ribs

In keeping with out theme for Memorial Day, we have a great little recipe for your holiday event. It is simple and extremely delightful. We hope you have a great holiday and we'll see you soon!
2 slabs pork spare ribs, 3 pounds each
2 cups brown sugar
1/2 cup dry mustard
1 Tbs paprika
1 Tbs garlic powder
1 Tbs onion powder
1 Tbs salt
1 Tbs freshly ground black pepper
1/2 Tbs cayenne pepper
Yellow mustard
First: Remove the membrane from of the bone-side of the ribs. Use a thin tool to begin separating the membrane from the ribs. Then using, paper towels firmly grasp the membrane and pull off. Combine the brown sugar, dry mustard, cayenne, paprika, garlic powder, onion powder, salt and pepper in a small glass bowl. Place a thin coat of yellow mustard on both sides of the ribs. Massage the rub into the ribs and let sit for 1 hour.
Next: Get your grill going at a steady temperature of 225° to 250°. Place the ribs bone-side down over indirect heat (heat on one side of the pit and meat on the other. Cover and cook. The indirect heat will cook them slower, making them tender.
Finally: As you finally finish cooking, slather the ribs with a quality barbecue sauce and allow to cook until the sauce becomes "tacky" to the touch.
