Chow Chow is that slaw-like substance that is topped on those delicious pulled pork sandwiches. It is easy to make, but takes some time to obtain! You will need to know how to can and preserve to make this one come out right.

There are thousands of recipes, but this is an old and tried one:
1 qt. chopped cabbage
3 C. cauliflowerets
2 C. sliced onion
2 C. diced green peppers
2 C. chopped green tomato
2 C. apple cider vinegar
1 C. diced red peppers
1 1/4 C. sugar
3 T. non-iodized salt
1 tsp turmeric
1 tsp celery seed
2 tsp. ground mustard
1/2 tsp ginger
1 tsp pickling spices
1/2 tsp mustard seed
Wash drain and prepare vegetables, sprinkle with salt and allow to stand overnight. Then turn into a colander and drain well. Combine vinegar, sugar and spices in a cheese cloth bag and simmer for 10 minutes. Add drained veggies, bring to a boil and reduce to simmer for 10 minutes. Remove spice bag. Pack into hot, sterilized jars and seal with canning lids.
