Chipotle Dry-Rub Shrimp
Comments: Chipotle peppers are jalapeno peppers that have been dried to give them some smoky flavor and at the same time they are more mild that their former selves.
1 lb jumbo shrimp (uncooked)
1 Tbs olive oil
1 Tbs dried oregano
1/2 Tbs dried thyme
1 tsp black pepper
1 tsp lemon-pepper seasoning
1/2 tsp ground chipotle chile pepper
1/2 tsp salt
Shell, devein and pat dry
the shrimp. In a medium bowl, mix the oil, oregano, thyme, lemon-pepper, ground chipotle, salt and pepper. Add shrimp and toss thoroughly.
Skewer the shrimp or place in a grill basket. Cook on a hot grill about 2 minutes per side, until shrimp are no longer translucent. Brush both sides lightly with extra olive oil while cooking.
Serve hot or at room temperature with the dipping sauce.
