Chicken rollups can mean just about anything ... even a burrito or taco! They also make for a great party food because they are absolutely great for entertaining. They look so great!
First, collect the following ingredients:
4 chicken breasts, boneless and skinless
2 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
8 ounces sharp cheddar cheese, grated
1/3 cup Italian parsley - finely chopped
1/3 cup green onions, chopped
2 Tbs freshly ground black pepper
1 tsp lemon peel - grated
1 tsp kosher salt
Toothpicks - soaked
Combine the lemon juice, oil, salt and pepper in a shallow pan. Clean, rinse and pat dry the chicken breasts. Then pound until about 3/8ths inch thick. Marinate both sides of the chicken for about 30 min to 1 hour in refrigerator turning occasionally.
Remove chicken [discard the marinade]. Combine remaining ingredients (but only 1/2 of the cheese) thoroughly and spread evenly over the chicken breasts. Roll chicken enclosing the filling and secure with the soaked toothpicks. Grill until done turning occasionally. Remove, place on a serving plate and sprinkle with the remaining cheese. Serve immediately.
