The Count of Monte Cristo (Edmond Dantes), was a young sailor who was unjustly accused of aiding the exiled Napoleon. After 14 years of imprisonment in a French island fortress, he escapes by taking the place of a dead companion by being sewn into a burial shroud and thrown into the sea. Dantes eventually makes his way to the island of Monte-Cristo adopting the persona of the Count of Monte Cristo and becomes a powerful, shadowy figure who eventually avenges himself on those who wronged him. Enjoy!
Directions: Begin with 3 boneless chicken breasts trimmed of all fat. Butterfly each breast and open up flat. Place the following on the chicken breast:
3 thin slices of Boars Head Ham
(you can also use turkey)
4 small slices of sharp cheddar cheese
Mix the following in a separate bowl:
1/4 cup olive oil
4 cloves of garlic - grated fine
Fold the chicken back together with the ham and cheese in the middle. Using a basting brush, coat both sides of the chicken with the above garlic and oil. The sprinkle each side of the chicken breast with the following mixture:
1 T. salt
1 t. garlic
1 t. onion powder
1/2 t. thyme
1/2 t. ground bay
1/2 t. sage
1/2 t. black pepper
Grill over direct heat turning frequently until the center reaches 160 degrees.
