Cheese Glazed Shrimp Appetizers
If you are seeking some zesty and delicious appetizers for your party friends, then this dish is just the ticket. Better fix plenty as there will be no survivors.
First, collect the following ingredients:
10-24 shrimp, cleaned, shelled and butterflied
1/ cup butter
1/2 cup honey
2 tsp apple cider vinegar
2 tsp extra virgin olive oil
8 ounces Monterey Jack cheese
salt - to taste
fresh ground black pepper - to taste
After melting the butter, whisk in the honey and vinegar thoroughly. In a plastic bag, combine the shrimp with the honey-butter-vinegar mix and let marinate 10 minutes. Remove and place the cheese (cut into long thin slices lengthwise in the "crack" of the shrimp. Close the shrimp around the cheese and secure with two (2) skewers - one at the top and one at the bottom of the shrimp. Grill shrimp with the lid down until the cheese begins to melt and the shrimp begins to brown.
