So, you may be thinking about becoming a barbecue judge ... or perhaps you just want to know what it is that the judges are looking for (and tasting) when judging great barbecue. Who are the table captains? And what do they do? Who officiates the contests? Overcooked? Under cooked? Too Salty? Too flat tasting? Mushy? Tough? and many more.
My preference is to save the beer for the cook, however, here's something just for you. Smoky.
Mix the following ingredients:
1 pt. beer
1 pt. apple cider vinegar
1 pt. apple juice
1 c corn/peanut/olive oil
1 c Worcestershire sauce
2 T garlic powder
2 T onion powder
2 T paprika (Hungarian, preferred)
4 T salt
1 T fresh ground black pepper
2 t ground thyme
2 t ground bay
2 t celery seed
Simmer slightly and cool before using. After marinading, bring to a boil then baste during the cooking.
