Let's Get Started
4 oz salt
2 oz garlic powder
2 oz onion powder
1 oz ground thyme
1 oz ground bay
1 oz ground mustard,
1/2 oz fresh ground black pepper
Use as you would salt. Suggest that you put a drip pan underneath with about 1/2 inch of water to keep the juices from burning until enough fat gets to the pan. Defat the juices for some fantastic gravy. Cook at about 250 degrees and take it off when the center reaches 135 and let it set for 15 minutes before carving.
