Skewered Shrimp

Bacon wrapped skewered shrimp are simply great as an appetizers or even better when you have a whole plate of those morsels to make a complete meal! Pre-cooking the bacon is a touch to insure that the jewels are not overcooked.
Marinate the shrimp in the following:
20 fresh shrimp, peeled
10 slices of bacon, sliced crossways
1 Tbs sugar
1 Tbs olive oil
1 Tbs apple cider vinegar
1 tsp black pepper
1 1/2 tsp paprika
1/ tsp salt
1/2 ground cumin
1/4 tsp red pepper flakes
Clean and peel shrimp. Rinse and pat dry. Mix other ingredients (excluding the bacon) in non-reactive (glass or plastic) bowl and marinate shrimp for 30-60 minutes. Take the bacon (pre-sliced) and cook in a skillet over medium heat until soft, edges begin to curl but not browned. Remove and allow to cool. (If the bacon becomes stiff, then you have over cooked it.) Wrap shrimp with bacon and secure with skewer or toothpick.
Take remaining marinade and bring to light boil for 2 minutes. Cook over medium heat turning frequently. Brush with marinade occasionally until done. Serve immediately.
